I made this a couple of times, ALL IN UGANDA I think.
Fluffy Yellow Cake
Cream throughly
3/4 Cup soft shortening
1 1/2 cups sugar
add, beating until fluffy
3 egg yolks,
1 tsp vanilla
1 tsp butter flavoring-not sure you can buy this any more, I may use butter for some of the shortening
Add sifted dry ingredients alternately with milk
2 1/4 cups flour or cake flour- HA I bet I used cake flour in the cake in Uganda,
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup thick sour milk or buttermilk *
fold in gently
3 egg whites, stiffly beaten
Pour into 2 greased and floured 9 inch pans or a 9x 13 pan and bake at 350 degrees for 25 to 30 minutes. *(May use sweet milk but omit soda and increase baking poweder to 3 tsp instead.)
I used cake flour I'm sure cause Oscar is the one who went to the store for flour and other things I'm sure and he picked up the cake flour, and a big box at that. EEEK things were more expensive there too. Oh well we made some fun things while it lasted, including Nilla Wafers, which is what I missed. Don't know if I still have the reciepe for that though.
